Khinkali is a traditional Georgian dish, just like khachapuri. These products are made from unleavened dumplings with various fillings. There are also vegetarian options: with potatoes, mushrooms or cheese. The traditional filling is minced meat chopped with a knife.
It is necessary
- chicken eggs - 1 pc;
- premium flour - 500 g;
- lamb - 200 g;
- boiled water - 1 glass;
- meat broth - 0.5 cups;
- onions - 4 pcs;
- beef - 150 g;
- ground black pepper;
- ground red pepper and salt.
Instructions
Step 1
Place the flour in a mound in a large bowl. Make a depression in the middle of this mound, pour in the beaten egg, warm water and salt.
Step 2
Knead the khinkali dough, cover it with something and let it sit for 30 minutes. Chop the meat into small pieces and twist them through a meat grinder. Cut the peeled onion into small thin pieces and add to the meat.
Step 3
Pour the broth into the cooked minced meat, pepper and salt. Mix everything well. Roll out the dough into very thin layers and cut out the circles with a glass that is about 10 cm in diameter.
Step 4
Place the minced meat filling on each circle obtained with a spoon, and then gather the edges of the dough in folds, fasten them together in the center.
Step 5
To make the meat settle down, lift each khinkali by lifting it off the table. Tack each tip once more so that the juice will not leak out during cooking.
Step 6
Dip the khinkali in salted boiling water, stir gently to prevent them from sticking to the pan. When the products float up, cook for 4-5 minutes and then serve immediately, sprinkle with black pepper.
