Wash the meat and pat dry with a paper towel. Preheat a skillet (best used with a non-stick coating) and fry the meat on each side for five minutes each.

Heat the oven to 180 ° C. In a deep bowl, combine salt, pepper and thyme. Grate the meat with the resulting mixture. Wash and peel the carrots, cut them into wedges. Peel the onion and cut into large cubes. Spread the chopped vegetables on a baking sheet and place the meat on top. Bake for one hour.

Lower the oven temperature to 120 ° C. Take a bowl and mix the mustard and horseradish in it. Remove the baking sheet with roast beef from the oven, carefully coat it with the resulting mixture of mustard and horseradish, put it back in the oven and bake until fully cooked for another 45 minutes.

Place the prepared roast beef on a preheated dish, cover with foil and let it brew for 15 minutes.
