Rarely a holiday is complete without Olivier, herring under a fur coat, Caesar salad, and they, in turn, cannot do without mayonnaise or sauces based on it. There are many recipes for mayonnaise. For mayonnaise you will need:
- 250 ml of vegetable oil;
- 2 eggs;
- 1 yolk;
- 10 g of mustard;
- 10 g lemon juice;
- 5 g of sugar;
- 2 g of ground pepper;
- 2 g of salt.
Making mayonnaise
Cool the eggs, add the yolk, process them in a blender until smooth and fluffy. Continuing to beat, pour in vegetable oil in a thin stream. In seconds, the mass will turn white and change its consistency. Once this happens, add the rest of the recipe ingredients to the mayonnaise.
If, for reasons of hygienic safety, you do not eat raw chicken eggs, replace them with quail in a ratio of 1 to 5. Quails do not suffer from salmonellosis and a number of other specific avian diseases, and therefore their eggs in the context of hygienic safety are a good substitute for chicken eggs.
Add some ketchup or tomato paste to this recipe's mayonnaise for a Thousand Islands Sauce. If instead of tomato you put chopped herring or keel fillet - Caesar sauce. A handful of finely chopped pickles will turn the mayonnaise into a mayonnaise tartar sauce. A few cloves of garlic added to a mayonnaise recipe - and a spicy garlic sauce "for all occasions" is ready!
For healthy eating habits, make mayonnaise using extra virgin olive oil. A delicious healthy sauce with an abundance of omega acids and trace elements awaits you. Tellingly, the greenish olive oil will give this mayonnaise a spicy bitterness, and the traditional yellow - an even more silky texture.
