Cooking mushrooms: raw
Champignons, like other healthy vegetables, can be eaten raw. This not only gives you the advantage of fast cooking, but also ensures that all the nutrients are obtained. But remember not to overdo it: mushrooms are difficult for the body to assimilate, besides, some do not tolerate raw mushrooms poorly, which can lead to flatulence. It is best to use them raw for salad.

What you need to make mushroom salad:
- 250 grams of champignons, - 5 large spoons of olive oil, - 4 large spoons of fresh lemon juice, - a large spoonful of grated lemon zest, - a couple of cloves of garlic, - salt and pepper if desired, - greens, - 3 large spoons of grated Parmesan.
Recipe preparation:
1. Peel the mushrooms and cut them vertically into very thin slices.
2. In a bowl, combine vegetable oil, lemon juice, lemon zest and garlic for dressing.
3. Add pepper and salt.
4. Add the dressing and chopped parsley to the mushrooms.
5. Stir the salad very carefully so as not to break the mushrooms.
6. Sprinkle with grated Parmesan cheese on top.

Fried mushrooms
When fried, mushrooms lose some of their nutrients due to the high temperature. On the other hand, they fully reveal their scent.
To fry the mushrooms, you need a large skillet so that they are well done on all sides.
What you need for fried mushrooms:
- 250 grams of champignons, - a couple of tablespoons of butter, - 3 cloves of garlic, - 2 red shallots, - salt and pepper if desired, - a handful of fresh chopped parsley.
Step 4
Frying recipe:
1. Peel the mushrooms and divide them into four parts.
2. Heat oil in a skillet until it sizzles.
3. Add mushrooms and spread evenly.
4. After about 4 minutes add the onion and garlic.
5. Fry for about three minutes.
6. Season the fried mushrooms with salt and pepper and add the parsley.
Step 5
Steam mushrooms
Often times, mushrooms are steamed because of the relatively low temperature so that they retain more nutrients than when they are fried. Here they also acquire a strong aromatic taste that blends well with the aromas of herbs. The less oil is added, the less nutritious the meal is. Steamed mushrooms can be served with both meat and vegetarian dishes, such as pasta.
Ingredients for steamed mushrooms:
- 250 grams of champignons;
- half a glass of chicken, beef or vegetable broth;
- 3 cloves of garlic;
- 2 onions;
- fresh or dried oregano spice;
- pepper and salt.

Recipe:
1. Peel the mushrooms and cut them into thin slices.
2. Cut the green onions into small rings and set aside for a while.
3. Now lightly fry the garlic and white ends of the green onions over medium heat.
4. Pour broth into a pan and heat to a boil.
5. Now add mushrooms, sauteed onions and garlic to the steam basket and reduce heat.
6. Season with salt, pepper and oregano.
7. Finally add the green onions. Now to the table!
