Drying. The collected leaves must be washed, spread out on paper 5 cm thick. Leave for a day in the shade, while stirring occasionally.
Twisting. To do this, it is necessary to twist the leaves by hand in small rolls until the juice appears and the color changes to a darker one.
Fermentation. Put fresh leaves in a bag and place in the freezer for 6 hours. Then remove from the bag and spread the leaves on an oilcloth. After the appearance of cell sap, the leaves will darken. They should be rinsed and covered with a damp cloth until a pleasant aroma appears.
Drying. After the end of fermentation, the leaves must be finely chopped and put on a leaf in a thin layer, dried at 100 ° C for about an hour in the oven. The leaves should turn out black and not crumble into dust.
Koporye tea should always be brewed fresh. To do this, you need to take a glass teapot, rinse it with boiling water, put the required amount of tea leaves and pour hot water, not boiling water. Let it brew for 20 minutes. Such tea can be brewed in a 1/1 ratio with black tea, while the taste will be slightly different.
