The term "al dente" in translation from Italian means "by the teeth". This name is used in cooking for pasta and vegetables. It describes the state of the dish when it is already ready, but did not have time to cook until the end. When biting through properly cooked pasta or spaghetti al dente, the teeth should feel a little resistance, i.e. internal elasticity of the product. To properly prepare such a paste, you must follow some rules.
Ingredients
To make al dente pasta, you need one pack of pasta. It must necessarily be durum wheat pasta. Choose quality Italian pasta. The finished pasta of this kind will remain firm enough and will not have time to boil too quickly, like ordinary pasta. In addition, such a dish will have a low glycemic index, and will not lead to an increase in blood sugar.
You also need to prepare 1 onion, 3 cloves of garlic, a small bunch of parsley, and a jar of chopped tomatoes. You can salt to taste.
Cooking process
Take a large heavy-bottomed saucepan. Pour in water at the rate of 1 liter of water per 100 grams of paste. When the water boils, add salt.
Dip the pasta into slightly boiling water. Place them in the center of the pot so they are in the hottest boil. Increase the heat a little bit and reduce it after the water boils again. Stir frequently and do not cover.
Look at the packaging for the cooking time of the pasta. Cook them for a few minutes less than the specified time. Try them a few times. You can also take one pasta out of the pan and break it. If it is white on the inside, which is very different from the outside, the paste is not yet ready. If the color difference is not very noticeable, drain the water.
Transfer the pasta to a colander. After draining the water, transfer it to a saucepan. Make sure that the liquid is not completely glass, otherwise the paste will be too dry. Most importantly, do not rinse the pasta with water, if they are of high quality, they will not stick together anyway. Cover them with a lid for a few minutes so that they come in.
To prepare the tomato dressing, simmer the tomatoes in a skillet for about 5-7 minutes, adding garlic, onion and salt to them. Place the pasta on top of the pasta and garnish with finely chopped parsley.
Refueling options
Heat olive oil, add chopped garlic, two tomatoes and basil to it. After a few minutes, add chopped beans, pepper, thyme, salt and sugar to the dressing. You can also add a small amount of water. Combine the boiled sauce with pasta. Top with grated cheese.
Another dressing option is a mixture of cream, broccoli, ginger, sweet corn, and nuts. Combine these ingredients and simmer in a pan for a few minutes.
