    • chicken carcass (about 1 kg);
    • 150 g of noodles or vermicelli;

    • parsley root;

    • dill and parsley;
    • salt;
    • 1 cup flour;
    • 1 egg.
    • For dogwood gravy:
    • 100 g fresh dogwood;
    • 50 g raisins;
    • 1 tbsp. a spoonful of sugar.

Step 1

Chicken broth noodle soup

Wash the chicken, cover with cold water and put on fire. When the water boils, remove the pan from the heat and drain the water. Rinse the chicken with hot water. Then put it back in a saucepan, pour boiling water over and put on fire. Peel vegetables and roots, chop, fry slightly, put in broth, salt and add spices. Reduce heat to low, cover the pot and simmer for two to three hours. To determine if the chicken is done, pierce the thickest part of the chicken with a knife or fork. If they come in easily, the chicken is boiled. Remove from broth, cool and chop into pieces.

For homemade noodles, pour a glass of flour in a heap on a board. Make a well in the flour, pour the egg into it and salt. Pouring a little water (about 0.5 cups), knead the dough. Roll out the dough into a thin sheet, lightly sprinkle with flour and cut into strips of about 5-6 cm. Fold the strips in a stack in 5-7 rows, finely chop and place on a sieve to dry. Then shake off the flour and pour the noodles into the broth.

Wash the dill and parsley, dry and chop finely. Before serving, place the boiled chicken pieces into bowls, add the soup and add the herbs.

Homemade boiled chicken can be served as a second course. To do this, put the chicken cooked and cut into portions on a plate and pour with dogwood gravy. As a side dish, you can serve noodles or rice cooked in chicken broth.

Rinse the raisins and dogwood that have been pitted beforehand. Put the berries in a saucepan and cover with hot broth strained through cheesecloth so that the liquid barely covers them. Add sugar, cover the pan with a lid and boil the berries for 10 minutes until soft. The gravy for homemade chicken is ready.
