Step 1
Prepare the dough. Whisk the egg yolks with 70 g of granulated sugar. Add flour and stir. In another bowl, beat the whites into a firm foam. Combine the protein mass with the yolk and mix until smooth. Put baking paper on the bottom of the mold and brush with butter, pour out the dough. Heat the oven to 180 degrees and bake for about 20-25 minutes. Remove from oven and leave to cool. Cut the cooled cake into 2 parts.
Step 2
Prepare the cream. Chop pineapples finely and mix with 70 g granulated sugar. Soak gelatin in ice water. Whisk three egg yolks with the remaining granulated sugar until white. Combine the yolk mixture with the pineapple. Put on fire and cook until the mass thickens, stirring constantly. Whisk in the cream. Dissolve the gelatin in a thickened cream. Remove from heat. Leave the cream on for 10-15 minutes. Then mix the cream with the whipped cream until smooth.
Step 3
Take a deep shape. Cover it with foil and lay out the first cake, grease with cream, cover with the second cake and grease with cream again. Wrap in plastic and place in the refrigerator for 8-10 hours until completely solidified.
