May is the time for dandelions. It is in May that there are a lot of them. Dandelions can be used to make delicious and healthy jams. It helps repair gallbladder and liver cells. It also removes excess cholesterol and harmful substances, improves memory and treats atherosclerosis.

- - 3 tbsp. water
- - 1 kg of sugar
- - 300 pcs. dandelions
Instructions
Step 1
Collecting dandelion flowers. We clean it from the stem. We should only have yellow heads with sepals. Attention: never pick flowers along highways and factories. Flowers are needed from the forest, park, collected near rivers or lakes. It is better to pick flowers on a sunny day, around 12 noon, as there will be more nectar on the flowers.
Step 2
Rinse the flowers thoroughly. Leave them to soak for about 15 minutes in cold water.
Step 3
While the flowers are soaking, cook the sugar syrup. We take 3 tbsp. water, bring to a boil, add sugar and wait for the sugar to melt.
Put flowers in this boiling syrup. Cook for 20 minutes over low heat.
Step 4
Cut the lemon into slices along with the peel. Add to the jam until the end of cooking for 2-3 minutes.
After the expiration of time, remove from heat and leave to infuse for a day. The next day, strain the mixture through cheesecloth and cook again for 10 minutes.
Step 5
You should have an amber-yellow jam. It tastes like honey. Store the jam in the refrigerator. If you have bowel or stomach ailments, do not use this jam. Also, you cannot use it much. You shouldn't eat more than 3 liters per year.
