Delicate and aromatic melon jam will satisfy even the most demanding sweet tooth. This jam is good to serve with pancakes, pancakes, tea with cookies, you can use it as a filling for baking, as well as decorate cakes and pastries with it.

Step 1
For jam, try to use melons that are not quite ripe, the flesh of which is slightly dense. Wash the melon, dry with a soft towel. Cut in two, remove seeds and veins from the middle. Rinse the melon under water and peel off all of the rind. Cut the pulp into small cubes, about 2 to 3 centimeters each.
Step 2
Take a 2-quart saucepan, pour a quart of water into it and bring to a boil. Dip pieces of melon in boiling liquid and simmer for 5-6 minutes. Remove the pan from heat, drain and set aside for 1-2 minutes. Pour cold water over the hot melon slices for 3-4 minutes. Then discard the melon in a colander so that water from the pieces of glass will dry out slightly.
Step 3
While the melon dries, make the syrup. Put half a liter of water in a saucepan and bring to a boil. Slowly add sugar to the boiling liquid, not forgetting to stir. Boil the syrup for 10-15 minutes.
Step 4
Put dried melon pieces into a 3-liter saucepan and pour half of the finished syrup over them. Place the saucepan over low heat, bring to a boil and simmer for 6-7 minutes, stirring gently. After that, remove the pan from the stove, cover and set aside for 7-8 hours (or until morning if you cook in the evening) to soak the melon.
Step 5
Then put the saucepan with pieces of melon in syrup over low heat, adding half of the remaining syrup to this mixture. Bring to a boil and cook for 9-10 minutes, stirring gently. Remove the pot from the stove again and set it aside for at least 9-10 hours.
Step 6
After the allotted time, put the saucepan over low heat, add the rest of the syrup and bring the mixture to a boil. Add vanillin and citric acid to the jam and cook for 15-20 minutes until cooked (melon pieces should be quite soft). Pour the finished jam into sterilized jars and roll up.
