Delicious homemade preparations can be made not only from garden and forest berries, but also from southern fruits, for example, melon. It will make an excellent dessert in the form of jam, into which you can add various spices and other types of fruits during cooking.

It is necessary

    • 2 kg of melon (takes into account the weight of the pulp without crusts);
    • 5 tbsp. Sahara;
    • 1 lemon;
    • 50 g of ginger root;
    • vanillin or cinnamon (optional)

Instructions

Step 1

Take a ripe melon, the torpedo variety is the most suitable. Cut in half, remove seeds and cut out the pulp. Then chop it into cubes with a side no more than 1 cm and put in a saucepan. Peel and grate the ginger root. Place in one bowl with melon. Squeeze the juice out of the lemon and pour in the same. Grate the lemon zest, add to the juice. Pour in 2-3 tbsp. sugar, mix everything. Leave the mixture in a cool place for 2-3 hours.

Make sugar syrup. To do this, take 100 g of sugar per liter of water. Heat the syrup until the sugar dissolves, but do not boil. Transfer the melon slices mixed with ginger and lemon to it. Cook over medium heat for about 15 minutes. Then add more sugar - about 2 tbsp. per kilogram of fresh melon. Continue making the jam, stirring constantly. By the end of cooking, it should be thick. For a sample, drip a little onto a cold plate - if the jam does not spread, it can be considered ready. Add some vanillin to the mixture for flavoring halfway through cooking, if desired. Cinnamon powder can also be an interesting addition, but should not be used with vanilla.

Step 3

Prepare containers for packing jam. Sterilize glass jars and metal lids in boiling water for a few minutes, then dry. Cool the finished jam a little so that the jars do not burst from the hot contents. Pour it into containers and close the jars with lids using a sealer. It is best to store jam in a cool, dark place, such as a cellar or closet, and after opening the jar in the refrigerator.

Step 4

Lemons from the main substitute for kumquats. They should be cut into small cubes without peeling the zest and added to the melon with ginger. In this case, it is advisable to add freshly squeezed orange juice to the jam.
