Quinoa is the seed of a plant that is often referred to as a cereal because of its physical resemblance. Quinoa's taste is not pronounced, which allows you to prepare a variety of dishes - from desserts to snacks and salads. Delicious Mexican-style dish with quinoa, black beans and vegetables.
It is necessary
- - 15 ml of olive oil;
- - 2 cloves of garlic;
- - 1 jalapeno pepper;
- - 200 g of quinoa;
- - 240 ml of vegetable broth;
- - a can of canned black beans (approximately 400 ml);
- - 400 g of tomatoes;
- - a teaspoon of chili powder;
- - half a teaspoon of cumin;
- - 150 g of canned corn;
- - salt and black pepper to taste;
- - 1 avocado;
- - juice of 1 lime;
- - 2 tablespoons of chopped cilantro.
Instructions
Step 1
Squeeze the garlic, scald the tomatoes with boiling water, peel them off and chop finely. Place the corn and black beans in a colander to drain the excess liquid. The avocado needs to be peeled, pitted and cut into small pieces.
Step 2
Heat olive oil in a heavy-bottomed skillet over medium heat. Add garlic and finely chopped jalapeno peppers, fry for a minute, stirring occasionally.
Step 3
Pour vegetable broth into the pan, add beans, corn, tomatoes, avocado. Season with pepper, salt, chili powder and cumin.
Step 4
Stir all the ingredients, bring to a boil and close the pan with a lid. Simmer quinoa with vegetables over low heat for 20 minutes.
Step 5
Add avocado, lime juice and cilantro, mix and serve immediately.
