  • - 15 ml of olive oil;
  • - 2 cloves of garlic;
  • - 1 jalapeno pepper;
  • - 200 g of quinoa;
  • - 240 ml of vegetable broth;
  • - a can of canned black beans (approximately 400 ml);
  • - 400 g of tomatoes;
  • - a teaspoon of chili powder;
  • - half a teaspoon of cumin;
  • - 150 g of canned corn;
  • - salt and black pepper to taste;
  • - 1 avocado;
  • - juice of 1 lime;
  • - 2 tablespoons of chopped cilantro.

Instructions

Step 1

Squeeze the garlic, scald the tomatoes with boiling water, peel them off and chop finely. Place the corn and black beans in a colander to drain the excess liquid. The avocado needs to be peeled, pitted and cut into small pieces.

Step 2

Heat olive oil in a heavy-bottomed skillet over medium heat. Add garlic and finely chopped jalapeno peppers, fry for a minute, stirring occasionally.

Pour vegetable broth into the pan, add beans, corn, tomatoes, avocado. Season with pepper, salt, chili powder and cumin.
