Domestic duck meat, despite a rather thick layer of subcutaneous fat, is considered lean and has an original taste. Almost all recipes for its preparation contain fruits, which makes the dishes memorable and worthy of a central place on the festive table.

- 5 sour apples;
- 2 tablespoons of water;
- parsley.
Instructions
Step 1
To cook homemade duck with oranges, take one large carcass, rinse under running water and cut into portions. Pour 5 tablespoons of vegetable oil into a preheated pan and lightly fry the duck meat in it. Then take two oranges and peel them off. Chop it into thin strips and put it in a glass with boiling water. Cut the oranges into wedges and remove all seeds. Rinse one bunch of grapes thoroughly in lukewarm water and remove the berries from it. Transfer the duck from the skillet to the glass roasting pan along with the butter. Arrange orange slices and grapes around it. Sprinkle the rind over the duck. Place the lid on the frypot and place in the oven. Bake the dish for 20 minutes at 180 degrees Celsius.
Step 2
To cook homemade duck in wine sauce with cherries, take one large carcass, rinse and pat dry with napkins. In a separate bowl, combine 3 tablespoons of salt and 2 tablespoons of ground black pepper. Rub this mixture on the inside and outside. Wrap the duck with cling film and leave at room temperature for 2 hours. At this time, grease a baking sheet with sunflower oil. Then prick the carcass with a fork in several places and place on a baking sheet. Roast the duck for an hour and a half, periodically pouring over the fat that will flow from the carcass. As soon as it is ready, transfer it to the brazier and pour over 150 ml of dry red wine. Add 2 teaspoons of ground cinnamon, salt and pepper well. Place the broiler in the oven for 5 minutes. While the duck is stewing, combine 100 ml of wine with 450 grams of pitted cherries in a blender. Open the oven, pour the cooked sauce over the duck and simmer for another 10 minutes.
Step 3
To cook homemade duck stuffed with apples, take one medium-sized carcass, salt and pepper it. Peel and slice 5 sour apples, remove all seeds and cores. Stuff the duck with apples through the hole in the belly, and then sew it with strong thread. Pour 2 tablespoons of water into a baking sheet and place the duck upside down on it. Place the baking sheet in the oven and fry the carcass for an hour. From time to time, water the duck with the juice that flows out onto the baking sheet. In addition, the carcass must be turned over every 15 minutes. Once the duck is done, cut the string and place the apples on a platter. Lay the carcass on top, cut into pieces and garnish with parsley.
