  • - 250 g mayonnaise;
  • - 1 glass of sour cream;
  • - ½ tsp. baking soda;
  • - 1 tbsp. l. vinegar;
  • - 200 g of fish fillets;
  • - 1 glass of cooked rice;
  • - 3 heads of onions;
  • - 100 g of cheese;
  • - salt.

Step 1

Siberian fish pie

First of all, prepare a yeast dough. To do this, dilute the yeast with a small amount of warm milk, add granulated sugar, pour in a little warm water, add flour, softened margarine and eggs. Knead the dough until it sticks to your hands and work surface. Lightly sprinkle the dough prepared in this way, cover with a napkin and put in a warm place to rise. The dough volume should increase by at least 1.5-2 times. The time it takes for the dough to rise depends on the quality and quantity of the yeast, as well as the temperature conditions.

Peel the fish, gut, rinse thoroughly under running water and carefully separate the fillets from the bones. Salt and pepper it well and set aside for half an hour. Peel the onions, wash and chop finely. Next, divide the yeast dough into 2 unequal parts, roll one (the larger one) on a floured working surface into a layer about a centimeter thick and transfer to a greased baking sheet. Sprinkle with some of the onion, then place the fish fillets on top of the bay leaf and spread the remaining onions evenly. Cover the top with a second layer of dough, previously rolled out, connect and pinch the edges so that the filling does not fall out. Pierce the middle of the pie with a knife and place in a preheated oven to bake for 45 minutes at a temperature of 180 ° C. Then take out the finished fish pie from the oven, cover it with a damp cloth on top and let stand for 5-7 minutes.

Quick fish pie

Sift the wheat flour through a sieve and mix with eggs, sour cream and mayonnaise. Add vinegar-slaked baking soda and salt. Mix everything well until smooth. You should get a dough that resembles sour cream in consistency. Pour half of the cooked dough into a fireproof pan. Then lay out the fish fillets, boiled rice and chopped onions, chopped into small pieces. Pour the other half of the dough over the filling. Sprinkle with finely grated cheese on top and place the fish pie in an oven preheated to 180 ° C and bake until tender, about 40-60 minutes.
