The variety of tomato sauces, soups and other dishes using tomatoes is amazing. Many recipes indicate that tomatoes must be chopped to prepare a dish. If your kitchen arsenal does not have a food processor or blender, you can do this with a regular grater.

Step 1
In order for the dish to turn out delicious, you need to carefully select the vegetables. They should be ripe and strong. For dishes that use grated tomatoes, choose meaty varieties. These tomatoes do not contain a lot of liquid, so they are easier to work with and are ideal for making thick sauces.

First you need to wash the tomatoes and peel them. There are special serrated blade peelers that are suitable for peeling tomatoes. You can do this with a regular vegetable peeler, if you have a good one and the tomatoes are strong.
Step 3
If you do not have a vegetable peeler, or it does not cope with tomatoes, then you can peel them using blanching. Choose a saucepan that is the right size. Take enough water so that it completely covers the tomatoes when you dip them into it. Put a pot of water on fire, bring to a boil.
Step 4
Remove the stalk attachment and make a cruciform incision in the skin at the base of the tomato. This is done to make it easier to pick up the skin later, and the tomatoes are easier to peel.
Step 5
Wait for the water to boil, dip the tomatoes in it and keep them in boiling water for 15 seconds to a minute, depending on the thickness of the skin. You will see how it begins to lag behind the cuts. Then remove them with a slotted spoon and cool in a saucepan with cold water for 10-15 minutes.
Step 6
Peel the cooled tomatoes. If you do everything right, it will be very easy to remove.
Step 7
Grate prepared tomatoes. Use the resulting mass according to your recipe. It is suitable for sauces and soups.
Step 8
If you couldn't find fleshy tomatoes, you can also cook from ordinary ones. It is rather difficult to rub them: they wrinkle, juice flows out of them. In order for juicy tomatoes to be easy to grate, you need to freeze them a little. After you peel the vegetables, place them in the freezer for a while. Tomatoes contain a lot of liquid, so don't keep them in there for long, or they will turn into a block of ice. You want them to be harder, but still rubble.
