Tomatoes are considered one of the healthiest fruits in the world. Fresh tomato juice is rich in potassium, magnesium, sodium, calcium. Of course, after conservation, the amount of vitamins in it decreases. But on the other hand, you can delight yourself with the refreshing taste of tomatoes even in winter.

It is necessary

  • - 11 kg of tomatoes;
  • - 700 g of sugar;
  • - 200 g of salt;
  • - 0.5 tsp ground red pepper;
  • - 30 peas of allspice;
  • - 10 carnation buds;
  • - 3 tsp cinnamon;
  • - 1 tsp. ground nutmeg.

Step 1

Go through the tomatoes. For juicing, select only fresh, ripe, fleshy fruits. Rinse them thoroughly under running water. Remove the stalks and cut out the damaged areas with a stainless knife. Cut large tomatoes into pieces.

Step 2

Pass the tomatoes through a juicer. This method of juicing is the fastest and easiest, but there is also a lot of waste from the electric squeezer. You can crank the chopped tomatoes through a meat grinder or grate. Then strain the pulp from the seeds through a medium-mesh metal sieve.

Step 3

Pour the tomato juice into an enamel or stainless steel pot. Do not use aluminum pans to boil tomatoes, as they can oxidize. Do not fill the container to the very top, as the juice will foam a lot during the boiling process.

Step 4

Bring the mixture to a boil over high heat. Reduce heat and add spices. Add sugar and salt, add cloves, cinnamon, ground red pepper and allspice to taste and stir. Turn off the heat immediately.

Step 5

Sterilize the jars over steam for 10-15 minutes, boil the lids in water for 5 minutes. Dry. Pour boiling tomato juice into hot jars to the top, cover with lids. It is important that the temperature of the juice is not lower than 95 degrees C. Sterilize juice cans: three-liter for 30-40 minutes, two-liter - 25-30 minutes, liter - about 20 minutes. With this method of conservation, the maximum amount of vitamins is preserved. From these ingredients, about 4 liters of ready-made juice is obtained.

Step 6

Roll up the cans with lids. Check the screw for tightness. Place the jars upside down or on their side and wrap them in a blanket until they cool completely. Store tomato juice in a cool place. Please note that the higher the storage temperature of the juice and the more air remains in the jar, the greater the loss of vitamin C.
