What to cook for dinner if you have very little time? Potato casserole with mushrooms is a great solution for such cases. It will be enjoyed by family members who do not fast.

Every housewife has potatoes in stock, and when the usual fried or boiled vegetable is already boring, you can slightly fantasize and cook a casserole.

You will need:

- potatoes 6-8 pieces;

- mushrooms - 300 g;

- onion - 1-2 pcs;

- sunflower oil.

We wash the potatoes, peel and boil until tender in salted water. Drain the broth, and rub the tubers in mashed potatoes. Cool the puree until warm.

While the potatoes are boiling, prepare the filling: finely chop the mushrooms (you can use any, fresh or frozen) and put them in a pan and simmer over low heat under the lid. When the juice is released from the mushrooms, pour the finely chopped onion to them, simmer until all the liquid has evaporated, add salt and spices to taste.

Grease the baking dish with vegetable oil, put half of the mashed potatoes in it, then the onion and mushroom filling and cover everything with the remaining potatoes. Sprinkle with sunflower oil if desired. Preheat the oven to 180-200 degrees and send the casserole into it for a quarter of an hour. Serve to the table, sprinkle with finely chopped herbs.

In addition to the casserole, you can prepare a fresh vegetable salad seasoned with sunflower oil.
