It is necessary

  • - 325 g flour;
  • - 175 g butter;
  • - 1/2 cup sugar;
  • - 3 lemons;
  • - 2 eggs;
  • - 1 egg yolk;
  • - 1 tbsp. a spoonful of grated ginger;
  • - 1 teaspoon of water;
  • - icing sugar.

Instructions

Step 1

Rinse one lemon, cut into slices, and place on foil. Put the lemons in the oven, bake at 170 degrees until golden brown. Then sprinkle them with powdered sugar, cool completely.

Step 2

Make pie dough. To do this, mix 300 g of flour with 100 g of butter, add egg yolk, grated ginger root, a spoonful of water. Knead a homogeneous dough from these components, put in the refrigerator for 40 minutes to cool.

Step 3

Take out the dough, roll it out, put it in a baking dish (a 30 cm diameter dish is suitable), cover with foil. Place in the oven for 8 minutes, preheat the oven to 220 degrees in advance. Remove the foil, cook the dough for another 5 minutes, during this time it will become a pleasant golden color.

Step 4

Remove the zest from the two remaining lemons using a fine grater, squeeze the juice from the pulp. Mix sugar, 5 tbsp. tablespoons of lemon juice, 3 tbsp. tablespoons of butter, a spoonful of flour, eggs and 4 teaspoons of grated zest until smooth. It is better to use a mixer for this. Put the resulting mass on top of the cake, return the pie to the oven for 20 minutes.

Step 5

Garnish the finished ginger and lemon pie with baked lemon wedges. Serve warm. As a decoration for this cake, you can use not only lemon, but also other berries and fruits of your choice.
