For Thais, a more familiar dish is poultry. Chicken marinated in a spice mixture and grilled or in any other way. This is a great excuse to take a break from abundance of fish.
It is necessary
- - chicken fillet 600 g;
- - coconut milk 1 tbsp.;
- - sugar 2 tablespoons;
- - vegetable oil 3 tablespoons;
- - a mixture of spices "curry" 1 tbsp.
- For the sauce:
- - roasted unsalted peanuts 150 g;
- - coconut milk 4 tbsp.;
- - red curry paste 2 tablespoons;
- - sugar 2 tablespoons;
- - lemon juice 3 tablespoons;
- - fish sauce 3 tsp
Instructions
Step 1
For the sauce, grind the nuts in a blender. In a saucepan, bring half of the milk to a boil. Add curry paste and cook for 10 minutes. Reduce heat, add nuts and remaining milk. Bring to a boil. Add sugar, lemon juice and fish sauce. Cook, stirring occasionally, for 15-20 minutes. Cool the finished sauce and put it in the refrigerator. Reheat before serving.
Step 2
Soak wooden skewers in cold water for 30 minutes. Cut the chicken fillet into small pieces. Add sugar, curry, milk, and soy sauce. Stir and let sit for 30 minutes.
Step 3
String the meat on skewers and place in a skillet preheated with oil. Fry, turning occasionally, until golden brown. Serve the skewers with warm sauce and fresh vegetables.
