What to cook as a main course
You can cook fish as a main course for lunch with a girl. For example, flounder in a cheese soufflé. This light and delicate dish of French cuisine will surely please a representative of the beautiful half of humanity. To prepare it you will need:
- 4 fillets of flounder;
- 6 raw egg whites;
- 4 raw egg yolks;
- 150 grams of hard cheese:
- 3 tablespoons of butter;
- 2 tablespoons of lemon juice;
- ground white pepper;
- salt.
First of all, wash the flounder fillets, pat dry. Then salt and pepper, sprinkle with lemon juice, gently roll into a tube and tie with culinary thread.
Heat the butter in a skillet and fry the rolls on all sides until a delicious golden crust is formed. Then transfer the fish to a plate and let the oil drain. Remove the culinary thread.
Whisk the whites into a strong foam. Grate the cheese on a fine grater and rub thoroughly with egg yolks until smooth. Then carefully combine with proteins.
Grease portioned baking dishes or one ovenproof dish with butter, put fried flounder fillet rolls, top with cheese and egg mixture.
The soufflé must be served immediately after cooking, since 20-30 minutes after it is removed from the oven, it will lose its splendor and fall off.

What to cook for dessert
Girls, as a rule, have a sweet tooth. Therefore, dessert is a very important part of the meal. It should be as light as possible, and always tasty and original. For dessert, you can also prepare a French cuisine dish "Bavarois with red berries". It will require:
- 1 tablespoon of gelatin granules;
- 1 glass of water;
- 1 kilogram of fresh red berries (raspberries, strawberries, red currants);
- 1 glass of granulated sugar;
- 1 ½ cups heavy cream;
- 3 raw egg yolks;
- 1 glass of cognac or rum;
- 3 tablespoons of powdered sugar.
Soak gelatin in ½ cup of cold water for 40 minutes to swell.
Wash and chop the berries in a blender, rub through a sieve to get rid of the seeds and skins. Combine the resulting berry puree with sugar in a saucepan and put on medium heat.
Add the swollen gelatin to the heated mixture and bring to a boil, but do not boil. Then remove from heat and cool.
Whisk the cream into a strong foam and gently stir into the cooled berry puree.
In a separate bowl, beat the yolks with rum or cognac. Mix the powdered sugar and half a glass of water, heat to 70-80C and remove from heat. Gently stir the yolks into the hot syrup, making sure not to curl.
It is recommended to serve sweet white wine with the French dessert bavarois with red berries.
Then combine the egg mixture and berry puree with cream. Mix everything well until smooth. Pour into portion molds or bowls and refrigerate overnight.
