- - 750 g rabbit;
- - 225 g of raw smoked ham;
- - 2 eggs;
- - 115 ml of milk;
- - basil, rosemary, parsley, sage;
- - salt pepper;
- - 55 ml of white wine;
- - 65 ml of olive oil;
- - 465 g frozen artichokes;
- - 125 g bacon.
Instructions
Step 1
Rinse and grind fragrant herbs. Beat the eggs thoroughly and then stir in the milk. Salt, add chopped herbs, transfer to a preheated pan with vegetable oil and cook an omelet.
Step 2
Cut the fillet from the rabbit and beat it off a little. Place the sliced ham on the rabbit and the toasted omelet on top. Roll up rabbit meat stuffed in the form of a roll and tie in several places with special kitchen thread.
Step 3
In a refractory dish in olive oil, fry the roll on all sides until golden brown, then add white wine, rosemary to it and simmer over low heat for 10 minutes.
Step 4
After that, transfer the frozen artichokes to a saucepan with a roll, add a little salt and pepper and simmer for another 6 minutes.
Step 5
Then remove the dishes with the roll from the stove, put the pieces of bacon on the roll and send them to bake in the oven for about 35 minutes at a temperature no higher than 185 degrees. Make sure that the liquid does not evaporate completely. Cut the finished roll into slices and serve on a large platter.
