Shortbread cookies with the telling name "Minutka" are one of the favorite household products of housewives, since its recipe is as simple as possible. Cooking also does not take much time and effort - at the same time, these cookies turn out to be very tasty, aromatic and crumbly.
Simple recipe
To make a simple Minutka shortbread cookie, take 300-400 g of wheat flour, 150 g of sugar, 60 g of milk, 200-250 g of butter or margarine and 1 tsp. vanilla sugar. First, prepare the base for the cookies by removing the butter from the fridge to soften it, then mash it to a thick sour cream consistency and mix with vanilla and plain sugar. Then beat the resulting butter-sugar mass until a fluffy head is formed and gradually mix with small portions of milk. After dissolving the sugar, add the sifted wheat flour to the mixture and knead the resulting dough thoroughly until a homogeneous consistency is obtained.
When making homemade Minutka cookies, vanilla sugar can be replaced with plain vanilla on the tip of a knife.
Fill a special pastry bag with a toothed end with the finished dough and squeeze cookies about 3 cm in diameter onto a baking sheet, pre-oiled with oil. At the same time, it is imperative to leave gaps between them, since "Minutka" is prone to slight creeping during the baking process. Cookies are baked in an oven preheated to 180-200 degrees for 20-25 minutes. The degree of readiness should be closely monitored, since the baking time of Minutki depends on the characteristics of the oven and the size of the cookies baked. Otherwise, it may burn - and if you set a lower temperature, it will simply spread over the baking sheet.
Jam recipe
To make Minutka cookies with jam, you will need 700 g of flour, 1 egg, 100 g of margarine, 1 glass of milk, 0.5 tsp. baking soda, as well as any thick jam, salt and vanillin to taste. Cut the margarine into pieces and wait until it softens - or, if you don't have time, heat it in a mug without boiling. Then, from softened margarine, grated eggs and warm milk, knead the dough into which add salt, vanillin and slaked soda. Mix all ingredients thoroughly until a homogeneous consistency is obtained, and then add flour to the resulting dough. To make it more tender and airy, you can add half a glass of yogurt or kefir to it.
Sugar is not used in this recipe, however, if desired, it can be added to the dough, not forgetting the sweetness of the jam.
The finished dough should lie down for about half an hour in order to acquire good softness and oxygenate, which will give the finished shortbread liver a special structure. Then gently roll it out into a thin layer, cut the resulting baking sheet and place a small amount of jam in the middle of each piece. Fasten the opposite corners of the dough so that you get small envelopes, which are laid out on a baking sheet and baked in an oven preheated to 180-200 degrees for 15-20 minutes, making sure that the cookies do not burn. Serve the ready-made Minutka shortbread cookies chilled, sprinkling with icing sugar immediately after removing from the oven.
