How to make homemade juicy cutlets
To prepare juicy cutlets you will need:
- pork or veal - 700 g;
- chicken fillet - 250 g;
- garlic - 2 cloves;
- onion - 1 head;
- frozen butter - 75 g;
- dry white bread - 3 slices;
- bread crumbs or flour;
- oil for frying cutlets;
- pepper, salt, nutmeg - to taste.

- Prepare minced meat by passing it through a meat grinder. If you do this twice, the patties will be even more tender.
- Soak dry white bread in water and remove the crust. Add bread to the minced meat without squeezing out the water.
- Grind the garlic and onion with a grater. Add spices, salt and mix thoroughly the whole mass. The better you mix the minced meat, the more tender and juicy the cutlets will turn out, since during the mixing the minced meat is saturated with air. If you see that the minced meat is very thick, then you can add a little water. But don't overdo it, you can just wet your hands in water.
- If at the very end of this process you add finely chopped butter from the freezer, then the patties will be even juicier! Try it yourself.
- If you want, you can add parsley or dill to the minced meat, one thing.
- The minced meat is already ready. If you are not in a hurry, then you can put it in the refrigerator for one hour, the cutlets will only be better from this.
- Proceed further. Form the minced meat into patties. Moisten your hands in water to simplify the process. Next, bread the cutlets in flour or breadcrumbs.
- Fry the chicken and beef patties in well-heated oil over high heat. This is necessary so that the patties are covered with a crust, which will help keep the juiciness inside. Now turn the heat down and grill, with or without a lid, until cooked through.
