Instructions
Step 1
Without buffalo milk, of course, you will end up with a non-classic mozzarella, but an imitation of this cheese. This requires fresh cow's milk. Pour milk into a saucepan and put on fire, heat until hot, but do not boil.
Step 2
Remove the pan with milk from the heat and add 1 tablespoon of salt and a glass of kefir, mix thoroughly with a wooden spoon.
Step 3
Add 1 tablespoon of vinegar and let sit for 30 minutes. After half an hour, the milk should be curdled. It turns out that the translucent whey begins to separate from the lumps of curd mass. If this did not happen, then you used unnatural milk or insufficiently fatty milk. In this case, bring this mixture to a boil, the curd will begin to separate from the whey.
Step 4
Take another saucepan, place a colander on top, on which lay a waffle towel or cheesecloth folded in several layers. Throw the curd mass in a colander, let the whey drain completely.
Step 5
Squeeze the curd mass thoroughly right in the towel, as the quality of the squeeze significantly affects the taste and texture of the mozzarella.
Step 6
When the whey is no longer squeezed out of the cheese, you need to wrap the mozzarella in cheesecloth (so that it does not dry out), leave in a colander with a saucepan and refrigerate overnight so that the remaining whey will finally drain into the pan.
Step 7
In the morning, unwrap the mozzarella ball, place in a bowl and cover with the separated whey. Put the cheese in the refrigerator for another day. After that, the mozzarella can be consumed and delicious, varied dishes can be prepared. Bon Appetit!
