Adjika is a spicy seasoning, which is a pasty aromatic mass. In Russian cuisine, tomatoes are the main ingredient in this dish. Adjika can also be cooked with horseradish, in this case it will turn out to be more spicy and aromatic.

It is necessary

    • Products:
    • 2 kg of tomatoes;
    • 1 kg of red bell pepper;
    • 300 g of garlic;
    • 300 g hot pepper;
    • 300 g fresh horseradish (root);
    • 1 cup salt
    • 1 cup vinegar (9%)
    • Inventory:
    • blender or meat grinder;
    • sharp knife;
    • tablespoon;
    • cutting board;
    • grater;
    • Bowl;
    • pan.

Instructions

Step 1

Wash the tomatoes thoroughly and peel them off. This must be done without fail, since it is poorly absorbed by the body and, moreover, spoils the appearance of the finished dish.

Step 2

Boil water. Make a small cruciform cut at the base of each tomato. Put them in a saucepan (in one layer) and pour boiling water over them, while the water should completely cover the tomatoes.

Step 3

Soak the tomatoes in boiling water for a few minutes. As soon as the peel on the tomatoes at the cuts is slightly curled, drain the water and fill them with cold running water.

Step 4

Peel the chilled tomatoes by pulling on the twisted corners with the blunt side of a knife. Cut each peeled tomato into 4 slices on a cutting board.

Step 5

Wash hot and sweet bell peppers under running cold water. Slice each pepper lengthwise, cored with a stalk, and remove the seeds. Rinse the pepper halves again under running water.

Step 6

Grind tomatoes and peppers with a blender, or swirl vegetables through a meat grinder.

Step 7

Wash the horseradish roots, peel them with a knife (like a carrot) and rinse again under running water. Grate horseradish on a fine grater or scroll through a meat grinder. Put it in the tomato and pepper mixture.

Step 8

Peel the garlic and chop it finely with a knife. Add it to the mixture. Put salt and vinegar there, mix everything thoroughly.

Step 9

Place adjika in clean glass jars and close tightly with lids. Store the seasoning in the refrigerator. Serve horseradish adjika with meat, fish dishes or just make sandwiches.
