If you want to pamper yourself with pancakes, but there are no eggs for their preparation - do not despair! You can find a worthy alternative to such traditional pancakes, having only kefir in the refrigerator.
Quick pancakes
As a rule, kefir pancakes are denser and have holes, however, you will not feel the taste of kefir or soda in the end. In order to make a quick pancake, you will need a teaspoon of baking soda, 500 grams of kefir, a tablespoon of sugar and 2 cups of flour.
Add soda to kefir, let it brew for about 10 minutes. Then add flour and sugar. Stir the resulting mass until a homogeneous batter (it should resemble sour cream in consistency). Pour the pancake into a hot skillet, slightly greased with butter, and fry it for a couple of minutes over medium heat, turn the pancake and fry it for another minute. Do the same with the following. The resulting pancakes can also be greased with butter and a little sprinkled with sugar or powdered sugar.
If you are not a fan of large pancakes, you can cook pancakes according to a similar recipe. All that is needed is to simply make the dough thicker by adding more flour. Spread the dough into the pan in small circles, fry on both sides and serve.
Fillings and sauces for kefir pancakes
If in the process of making pancakes with kefir you added not enough sugar to them, try preparing a filling for them. If you do not have enough sweetness, then make a filling with cottage cheese, sugar and sour cream. Mix the ingredients for the filling, just do not overdo it with sour cream, and wrap the resulting mixture in the finished pancake. Cottage cheese can be mixed with honey and jam.
If you have meat, mushrooms, and cheese in your stock, try using these ingredients to fill your pancakes. Finely chop the meat and mushrooms, fry them in a pan, adding cheese at the end. You can, in principle, put out the base in cream (simmer until the cream has boiled away). You can also add vegetables to the resulting filling - a cucumber or a tomato. Wrap the prepared meat and mushroom mix in a pancake.
Various sauces can be used as an additive to pancakes. For example, mix sour cream with sugar. However, you can mix sour cream with honey and jam - it all depends on your taste. Chopped nuts can also serve as an addition to pancakes. Simply crush the almond, hazelnut and peanut mixture and sprinkle it on the buttered pancakes. The same mixture can also be added to sour cream. If you have muesli in your arsenal, mix it with honey or sour cream.
Pancakes can be filled with different berries and fruits. You can also make a sauce from them: just grind what is in a blender, along with sugar and lemon juice.
