Squids are cooked either very quickly or, on the contrary, for a very long time. It takes 2-3 minutes over high heat to boil a squid carcass, but if you are going to stew it or did not have time to cook it, it will take at least 30-40 minutes for the meat to stop being "rubbery".

Frozen squid must be thawed before cooking. If you have unpeeled squid, peel them. Pull out the beak, remove the thin plates, remove the skin. Rinse the squid carcass under running water. Cut off the tentacles and slice the squid body into rings.

Squid are boiled in boiling water. Prepare a large pot of water and a slotted spoon, when the liquid boils, put a little salt and a couple of tablespoons of acid in it - vinegar, white wine, lemon juice.

Dip the squid into the water and stand with the slotted spoon at the ready. As soon as the squid meat turns white, take it out.

Place the finished squid on a paper towel to cool and dry. You can put boiled squid in a salad, marinate or eat it right there, like the Japanese do, seasoning with only soy sauce.

A good marinade for boiled squid can be made with lime juice, sesame oil, rice vinegar, brown sugar, a few cloves of garlic, and a mixture of fresh chopped herbs like mint, cilantro, and lemongrass.

It is not necessary to boil squid in a large amount of water, because with the same success they can be poached - boiled in a small amount of water or broth with a small addition of acid. For example, mix equal amounts of water and apple cider vinegar in a deep skillet, add a little less soy sauce and a little grated ginger. Bring to a boil and place the squid in a skillet. Cook for 3-4 minutes.

If you've overcooked the squid, it's easy to fix. Place them in a saucepan with red wine, garlic, thyme and pepper and simmer over low heat for 30 minutes to 1.5 hours.

If you find boiled squid meat, even cooked for a few minutes, a little harsh, try marinating it in yogurt, lemon juice, or kiwi or papaya fruit pulp before boiling. Marinate for no more than 15-20 minutes, depending on the size of the squid.
