Okroshka with squid meat is a summer soup. Unusual for okroshka, but there is no need to argue about the benefits of squid.   • - 200 g squid;
  • - 3 potatoes;
  • - 2 eggs;
  • - 1 cucumber;
  • - 3 tbsp. spoons of sour cream;
  • - 2 teaspoons of mustard;
  • - 1 liter of bread kvass;
  • - green onions;
  • - parsley;
  • - dill;
  • - salt.

Instructions

Step 1

Peel the squid. Take only white meat (carcass). Dip in boiling, salted water, cook for 5 minutes. Cut the cooled meat into small strips.

Step 2

Cook the potatoes in a double boiler. Cool, peel and cut into cubes.

Step 3

Hard-boiled eggs. Separate the whites from the yolks. Cut the whites into cubes. Grind the yolks with mustard and salt. Finely chop green onions, parsley and dill.

Step 4

Combine the ingredients and pour in kvass. Refrigerate for 30 minutes. Add herbs and sour cream before serving.
