Okroshka is a popular summer soup. It not only saturates well, but also helps to create coolness in the heat. Okroshka can be cooked not only with the addition of the usual sausage or meat. Try the unusual but delicious squid option.

- 500 g rye bread;
- a bag of yeast;
- 1 tbsp flour;
- 100 g sugar;
- 2 liters of water;
- honey and horseradish (optional);
- 500 g squid;
- 200 g potatoes;
- 100 g green onions;
- 100 g radish (optional);
- 400 g of cucumbers;
- 50 g sour cream;
- 3 eggs;
- 1 tbsp mustard;
- a bunch of greens;
- salt.
Instructions
Step 1
Prepare kvass. To do this, cut rye bread into cubes and dry in the oven at 180 ° C for 15 minutes. Transfer the crackers to a jar or saucepan and cover with hot water. Leave to infuse for 3-4 hours. Then strain the resulting water by removing the bread from it. Dissolve the yeast in warm water, add flour to it and stir. Then pour in the bread infusion, add sugar. Cover the liquid container with a cloth and store in a warm place for two days. After that, if desired, you can put 2 tbsp into kvass. honey and a little grated horseradish.
Step 2
An interesting addition to kvass will be ginger and raisins, but in this case, the liquid after adding the components will need to be insisted in the refrigerator for a few more days. Kvass can also be prepared from a dry mixture if you do not have time for a full cooking cycle, but in this case its taste will differ from a natural drink. After preparing kvass, keep it in the refrigerator before serving.
Step 3
Boil the squid in salted boiling water for 10 minutes. Then remove, cool and cut into strips, removing hard parts such as the beak. Boil peeled potatoes and eggs. Peel and cut the potatoes into cubes. Extract the yolk from one egg, cut the others together with green onions and fresh cucumbers, the latter, if desired, can be peeled beforehand. Combine all crushed ingredients and place on bowls. If you love radishes, you can grate them and add them to a set of vegetables.
Step 4
Prepare an additive for okroshka. Mash the set aside yolk with mustard, then add salt and sugar. Stir the yolk mass with cold kvass. Pour the prepared liquid over the sliced ingredients before serving. Put sour cream in okroshka and sprinkle the soup with chopped parsley and dill. Do not forget to serve bread - best of all grain, rye or Borodino.
