It is necessary
-
- 300 g sour cream;
- 300 g butter;
- 300 g flour;
- 4 eggs;
- 250 g sugar;
- 350 g of walnuts;
- 0.5 tsp each ground nutmeg and cardamom;
- 1 tbsp. honey and butter
Instructions
Step 1
Prepare the dough. To do this, carefully separate the whites from the yolks. Melt the butter, pour into a small bowl. Add sour cream, 2-3 tablespoons of sugar, a pinch of salt and 4 yolks to the butter. Beat the mass very well.
Step 2
Sift flour. This must be done in order to cleanse the flour from possible lumps and enrich it with oxygen. Gradually adding flour to the prepared mixture of butter and yolks, knead the dough. It should be thick enough to be easily rolled into the formation.
Step 3
Divide the dough into 3 equal portions and refrigerate for 30 minutes.
Step 4
Heat a dry skillet on the stove. Place the walnuts in it and brown a little. Set aside some of the nuts to decorate the baklava. Chop the rest of the nuts well with a meat grinder or food processor. Stir in the spices.
Step 5
Beat the egg whites into a strong foam, add sugar and chopped nuts to them.
Step 6
Roll one piece of dough into a thin layer. Place on a greased baking sheet. Place half of the filling on top of the dough. Roll out the second layer and cover the filling with it. Spoon out the remaining nut mixture. Roll out the last piece of dough and cover the filling.
Step 7
Lubricate the surface of the future baklava with yolk. Using a pizza knife or a regular knife, cut the baklava into diamonds. Press half a walnut into each diamond.
Step 8
Preheat oven to 180 degrees. Place a baking sheet with baklava in it for 10 minutes. Melt the honey and butter. Very quickly brush the baklava just removed from the oven with this mixture. Place it back in the oven and bake until golden brown.
