In the old days, the process of storing tea was treated somewhat differently than it is now. This was due to the long-term transportation of tea leaves from the collection point to the consumer. But with the advent of road transport, the delivery situation has seriously changed.

The collected tea did not have the properties that would make it possible to immediately turn it into a drink. Before humanity began to use vehicles, the fermentation process of tea took place during transportation and subsequent storage. Thus, when the tea reached consumers, it was already ready for use.

Around the second half of the twentieth century, the demand for Pu-erh increased, and the time it took for the product to reach the consumer was significantly reduced. Therefore, during the period from harvesting tea to reaching consumers, the product did not fully ripen. In the 70s of the twentieth century, a technology was developed that made it possible to artificially accelerate fermentation.

The collected tea leaves were piled up and poured over with water. Inside the heap, the temperature rose in this way, and the fermentation process was significantly accelerated. This is how the two main varieties of Pu-erh tea arose. These are Sheng Puer "raw pu-erh" and Shu Pu-erh - "cooked", "forced" made using a simple technology.

Nowadays, many Chinese tea lovers prefer Pu'er to all other varieties.
