The soufflé recipe came to us from French cuisine. Soufflé can be either a main course or a sweet dessert. The dish contains at least two components: a mixture of sour cream consistency and whitewashed egg whites. Sweet soufflé is usually made on the basis of cottage cheese, chocolate, lemon, fruit. Soufflé is a very delicate and airy product.

- 1 glass of milk
- 35 g gelatin
- 0.5 cups water
- 250 g butter
- 8 eggs
- 1.5 cups sugar
- 1 tbsp. a spoonful of flour
- ¼ tsp vanillin
Instructions
Step 1
Soak gelatin in cold water and leave for 20 minutes.
Step 2
Separate the yolks from the whites.
Step 3
Place the proteins in the refrigerator.
Step 4
Mash the yolks white with half the sugar.
Step 5
Drain the milk in a thin stream, add flour and stir until smooth.
Step 6
Place the mixture in a steam bath and, stirring continuously, bring to a boil.
Step 7
Let the mixture cool.
Step 8
Whisk the butter until white.
Step 9
Add butter and vanillin to the cooled mixture.
Step 10
Whisk the cream with a blender.
Step 11
Heat gelatin until completely dissolved.

Cool the gelatin to room temperature.

Whisk the cooled egg whites while the gelatin cools.

While adding sugar in small portions, beat the whites until stiff.
Step 15
Continuing to beat, pour the gelatin into the whites in a thin stream.

Gently, so as not to fall off, mix the whites with the cream.

Put the soufflé on the cakes and refrigerate for 2-2.5 hours.
