  • - Sour cream
  • For hot beetroot in Polish:
  • - Beet base
  • - Boiled egg
  • - Tomato - 1 pc.
  • - Garlic - 1 clove
  • - Boiled potatoes - 1 - 2 pcs.
  • - Sour cream
  • For beetroot:
  • - Beet base
  • - Meat broth
  • - Tomato - 1 pc.
  • - Garlic - 1 clove
  • - Boiled egg - 1 pc.
  • - Sour cream
  • - Dill
  • - Crackers

Instructions

Step 1

Rinse the beets, remove the skin, cut the tops. Place the root vegetables in a saucepan, cover with cold water and cook for about 30 minutes. Season with a little more salt than you like. When the beets are cooked, remove and set aside for a while.

Step 2

Wash and finely chop the tops. Dip in the broth, and in the meantime, grate the beets on a coarse grater. Chop or crush 3 garlic cloves into small pieces.

Step 3

After 10 minutes, when the tops are cooked, throw the grated beets, garlic and citric acid on the tip of a knife into the pan. Reduce heat and wait for the broth to change its color to a rich burgundy under the influence of acid. Try salt, salt and pepper if desired. Close the lid tightly and remove from the stove. The base is ready.

Step 4

Prepare beetroot okroshka.

Add a hard mashed egg, sour cream, finely chopped fresh or lightly salted cucumber to the cold beet base. Mash the garlic with the tomato, this will add a special charm to the cold soup. Add separately mashed or diced potatoes, boiled separately. Season the finished okroshka with sour cream and sprinkle with fresh herbs.

Try Polish hot beetroot.

Hot beetroot base is seasoned with tomato, garlic, egg, sour cream, but the cucumber is not put into the beetroot. The dish is filled with hot mashed potatoes, sour cream and herbs.

Step 6

If you like meat soups, then prepare beetroot soup with meat broth.

Cook the broth separately. Cook the beetroot separately. Soup with meat broth is served only hot. Strain the beetroot, season only with garlic and serve croutons with it. Cook the entire complex dressing consisting of egg, sour cream, tomato, garlic and dill separately and place on plates. Then fill with hot or cold beetroot.
