Over medium heat, the mass continues to cook for 20 minutes until the pumpkin is soft. After its readiness, use a blender to puree the vegetable soup. Then you should pour orange juice into the soup, add salt and pepper, bring the mass to a boil again. Ready-made bright orange soup is poured into portioned bowls and complemented with sour cream and pumpkin seeds. In addition to puree soups, you can also make a soup with beans and celery from pumpkin. To do this, chop onions and garlic, cut the celery stalk into cubes about half a centimeter thick. The chopped ingredients should be fried in vegetable oil for 5-7 minutes, and the pumpkin should be peeled and cut into small pieces. Toasted vegetables and pumpkin are combined in a saucepan. Tomatoes in their own juice are also added here. The mass is boiled down for several minutes, until the mixture thickens. Then you need to add one and a half liters of broth (meat or vegetable), salt, pepper and cook over medium heat until the pumpkin becomes soft. At the end, add canned white beans, boil the dish for a couple of minutes and sprinkle with chopped herbs when serving. Pumpkin soups are sure to please even the most discerning tasters. In addition, pumpkin-based puree soups can be consumed even chilled on a hot summer day.
