Vegetable caviar is a familiar dish. It is prepared from zucchini, eggplant, beets, carrots, mushrooms, etc. It is pleasant to offer caviar from vegetables as a snack at any time of the year, because it is easy to preserve.
It is necessary
- - zucchini - 800 g;
- - sweet pepper (red) - 1 pc.;

- - tomatoes - 3 pcs.;
- - carrots - 2 pcs.;
- - olive oil - 3 tablespoons;
- - salt and pepper - to taste;

Instructions
Step 1
Prepare the foods listed in the instructions. Rinse vegetables under running water. Peel the carrots, cut into circles. Peel the zucchini and cook in cubes. Free the pepper from seeds and internal partitions, cut into pieces. Cut clean tomatoes at random, it is advisable to cook caviar from fleshy varieties of tomatoes. Peel the onion and chop it finely.
Step 2
Prepare a baking sleeve, tie it tightly on one side. Heat the oven to 180 degrees. Pour one spoonful of olive oil into the roasting sleeve, distribute it along the inside of the sleeve by rubbing. Mix the vegetables in a common bowl, pour over the rest of the olive oil. Season the food with salt and pepper, transfer to the sleeve. Tie the open side of the baking sleeve.
Step 3
Place the vegetables in the oven by placing the sleeve on a baking sheet or in a fireproof dish. Use scissors to cut a small cut on the top of the film. Steam will escape through this hole.
Step 4
Cook vegetables in a heated oven for 60 minutes. When baking in this way, you do not need to periodically stir the food.
Step 5
Carefully transfer the prepared zucchini caviar into any deep container. Process the vegetable mass with a blender until puree. At this point, taste the dish with enough salt and pepper. Serve chilled caviar, garnish with herbs.
