A very tasty and healthy dish that can be cooked outdoors and at home in an ordinary oven or grill. Such caviar can serve as an independent dish, or be an excellent side dish for meat or fish, as well as barbecue. Baked vegetables retain vitamins and nutrients better, and their taste is revealed in a new way.
It is necessary
- - 4 things. eggplant;
- - 4 things. sweet red pepper;
- - 2 pcs. yellow pepper;
- - 500 g cherry tomatoes;
- - 2 pcs. bulbs;
- - 4 things. a clove of garlic;
- - 100 g of cilantro greens;
- - 20 ml of vegetable oil;
- - 20 g of sugar;
- - 15 g dry thyme;
- - 10 g of red ground paprika;
- - 5 g of black ground pepper;
- - 5 g of salt.
Instructions
Step 1
Rinse all vegetables thoroughly in cold running water and let them dry slightly. Do not peel the pepper, put it whole on the grill or oven sheet, and bake it constantly, turning it a little until its skin begins to char in places. Remove the pepper and put in a bag, tie tightly. Gently peel the cooled peppers from the skin and seeds. Cut into large pieces.
Step 2
Peel the eggplants, cut lengthwise into long strips, no more than 4-5 cm thick. Place on the wire rack, brush with vegetable oil and fry on both sides.
Step 3
Peel the onion and cut into large pieces. Put onions and whole tomatoes in foil, add butter, sugar, salt, pepper and seasonings to them. Mix everything a little with your hands, kneading the onions. Bake everything in foil for no more than 10 minutes, cool.
Step 4
Crush the garlic in a press, salt and mix with oil. Mix the cooled vegetables with a blender or meat grinder, add garlic oil and finely chopped herbs.
