Step 1

Scale the fish. If it is not gutted, remove the entrails from it. Do this carefully so as not to damage the gallbladder, otherwise the fish may acquire an unpleasant bitter taste. The fish baked in sour cream is cooked whole, along with the head, so it is imperative to remove the gills: particles of sand, silt and dirt are retained in them. Then rinse the fish under cold running water and pat dry with a napkin.

Season the fish with salt and sprinkle with ground black pepper inside and out. Add some coriander. Spread on all sides with vegetable oil - sunflower or olive. Place the sprigs of parsley and dill in the belly.

Another preparation method can be applied to fish that have a lot of bones. The fish should be cut in half along the ridge and the spine removed. After this, the abdominal bones are removed and two lateral incisions are made from the inside to the outside. Bones that appear in the incisions should also be removed. After that, the fillet is folded into the same shape and then baked like a whole fish.

Grease a baking sheet with vegetable oil, place the fish in the middle. Fill a glass with about 50 grams of water and pour onto a baking sheet. This must be done to prevent the fish from burning in the oven.

Place the baking sheet in an oven preheated to 150 degrees. Keep the fish there for 20-25 minutes. Then take it out and cover it well with sour cream without removing it from the baking sheet. For this dish, it is better to take sour cream fatter so that it drips less when baking. After the fish is coated, return it to the oven. Keep in it for another 10-15 minutes. The result should be a delicious golden crust. If not, turn on the grill for five minutes to brown the fish.

Potatoes and rice are classic side dishes for fish dishes. Fish in sour cream goes well with mashed potatoes and ordinary boiled or fried potatoes. Rice should not be cooked for long so that it does not fall apart, but retains its shape. The dish can be decorated with herbs, salad, vegetables.
