    • For marzipan:
    • 250 g sweet almond kernels;
    • 7 pieces of bitter almonds;
    • 200 g sugar;
    • 1 tablespoon of water.
    • For mastic:
    • 90 g marshmallows;
    • 100 g of dark chocolate;
    • 40 ml cream;
    • 1 tablespoon butter
    • 1 tablespoon of brandy;
    • 120 g icing sugar.
    • For the test:
    • 1 cup of sugar;
    • 4 eggs;
    • 1 cup flour.

Instructions

Step 1

Prepare the marzipan mass. Scald 250 g of sweet almonds and 7 pieces of bitter with hot water. Peel the nuts off. Place the kernels on a baking sheet and place in the oven over the smallest heat. The nuts should dry slightly.

Step 2

Grind the nuts in a coffee grinder. You should get a very finely ground nut powder.

Step 3

Prepare the powder with 200 g of granulated sugar. Sift it through a strainer.

Step 4

Mix the sugar and almond powder until smooth. You can do this with a mixer.

Step 5

Sprinkle 1 tablespoon of cold boiled water on the sugar-almond mass. Stir the mixture continuously until smooth.

Step 6

Pass the marzipan mass through a meat grinder 3 times.

Step 7

Place the mixture in a water bath and heat while stirring. At this stage of preparation, you can add 30 g of powdered fruit sugar. The marzipan mass is ready.

Step 8

You can also sculpt roses from chocolate mastic. Break 100 g of dark chocolate into small pieces, place in a metal bowl and melt completely over low heat or a water bath.

Step 9

Add 90 g of marshmallows to the chocolate. Stir constantly with a spoon.

Add 40 ml of cream, 1 tablespoon each of butter and brandy to the bowl. This must be done at the moment when the marshmallows begin to melt and increase in volume. You should have a thick, homogeneous mass. When it's done, remove the cookware from the heat.

Step 11

Add 120 g of icing sugar in portions, carefully combining it with the base of the mastic. First stir the mixture with a spoon and then with your hands. This is best done on a table sprinkled with powdered sugar. The finished mastic should look like an elastic, non-sticky dough.

Roses can also be made from dough. Mix 4 eggs, 1 cup granulated sugar and 1 cup flour into a batter. Pour it on a baking sheet lined with baking paper in small portions. Bake in the oven over medium heat for a few minutes. Do not overdry!

Step 13

Blinding a rose is easy. Take a small piece of mastic or marzipan from which you will make this. Roll 4-5 balls of the same size. Then flatten them to make circles. You can roll the balls out with a rolling pin.

Step 14

Place the circles one on top of the other so that each subsequent one starts from the middle of the previous one. Roll this "ladder" into a roll. You just have to cut it in the middle with a sharp knife and bend the petals with your hands, forming them. Use a toothpick to apply streaks to the petals if desired. You have got two roses with a flat base, which you can immediately decorate the cake with.

Step 15

Reception of sculpting roses from dough differs from the previous one. Roll the baked blank for the petal with a tube or cone - this is the middle of the flower. Wrap the rest of the petals around the base until you get the right size rose.

Step 16

Blind a few roses, place them on the cake. Complete the composition with ribbons, leaves and bows sculpted from the same material as the roses.
