You can prepare many delicious dishes from minced meat. But not everyone likes to buy ready-made minced meat. It's much better to do it yourself. To prepare minced meat, the meat must be chopped.

Step 1
The easiest way to prepare minced meat is using a meat grinder. Meat grinders are manual, and there are electric. A manual one is harder to handle, but meat does not need to be prepared as thoroughly for it as for an electric one. Before you grind a piece of meat in a manual meat grinder, you need to wash it, blot it with a napkin, cut out all the veins, films, and remnants of bones. Then cut into pieces about 6x6 centimeters. The meat grinder must be properly assembled - the knives with sharp blades towards the grate - and screwed to the working surface.
Step 2
If the meat is very sinewy, you will not be able to remove absolutely all the veins. So that they do not wrap around knives, pieces of meat need to be slightly frozen before grinding. Then the knives will cut the veins easily. Sinewy meat will not work for an electric grinder. It will often have to be stopped and the veins wound around the knives removed. Therefore, it is better to pre-clean the meat and cut into small pieces - 3-4 centimeters.
Step 3
Grind chicken or tender veal in a blender bowl. Just before grinding, you need to cut it in very small pieces - no more than two centimeters. Some people don't like the consistency of the resulting minced meat. And someone, on the contrary, likes light and airy minced meat cutlets cooked in a blender. You won't be able to grind stringy meat in a blender, everything will be wound on knives. The blender can grind beef or pork fillets unevenly: half in mashed potatoes, and half in pieces.
Step 4
If there is no grinder at all in the house, you can grind the meat by hand using a knife. Only knives should be two and very sharp. This is what they do in the east. The meat is laid out on a wide board. Two sharp knives are taken, with which the meat is chopped very quickly. The movement should be as if playing a drum with drumsticks. The meat is simultaneously crushed and mixed, shifting to the side. The meat should be chopped, not cut. Because, if you cut into small pieces with one knife, it will still turn out into pieces (and it will take a lot of time). And if you chop with two knives, you get coarse minced meat.
Step 5
There is also the last, completely force majeure method of chopping meat, for which you will need a freezer and an ordinary coarse grater. The grater should be sharp. The meat is cleaned of veins and placed in the freezer in one piece, preferably oblong, which is comfortable to hold in the hand. There it should freeze well. And then the frozen meat is rubbed quite easily on the grater.
