In the memoirs of the lyceum friends of Alexander Sergeevich Pushkin, there are several references to the fact that lyceum students quite often prepared an eggnog, and it was not always a harmless non-alcoholic dessert. There are many recipes for its preparation, but the basis of the mogul-mogul is always an egg yolk, ground and whipped with sugar.
To make a mogul, you need a raw egg and sugar. In different recipes, honey, lemon juice, cocoa, butter, brandy, rum, cocoa powder can also be used. It is most convenient to prepare the mogul with a mixer in a deep cup, and serve in a cocktail glass. However, some types of this drink are not only a dessert, but also a medicine, and in these cases an exquisite glass is not at all necessary. You can cook eggnog only from eggs, the quality of which you are absolutely sure of. Remember that raw eggs can cause salmonellosis. Before breaking the shell, it must be washed. To separate the white from the yolk, break the egg into 2 halves over a bowl. Transfer content from one half to the other. The white will drain into the bowl and the yolk will remain in the shell.
Eggnog is often used to relieve sore throats. The heroine of the popular Soviet film, trying to make her voice high and resonant, simply drank raw eggs. Her successes were average, but if she cooked an eggnog, the result would be more interesting. Break 1 egg, separate the white from the yolk. Put the yolk in a deep cup or bowl. Add 1 tablespoon of sugar. Mash all this, and then beat with a mixer or whisk.
To prepare a baby dessert, add 0.5 teaspoons of cocoa powder and the same amount of melted butter to egg yolk and sugar. Beat all this with a mixer, and you will get the very drink that Dr. Aibolit once offered to his little patients.
Well relieves sore throat and honey mogul. Whisk 1 egg yolk. Heat a glass of milk and add to the yolk. Place 3 tablespoons of honey and 1 tablespoon of orange juice in the mixture. Whisk the protein separately with a tablespoon of sugar in it. Combine all ingredients and stir.
To make an alcoholic mogul, separate and beat 1 yolk. Add ½ tbsp. l. sugar syrup, 1 tbsp. l. cream and the same amount of rum, brandy or cognac. Add an ice cube. Filter and drain into a tall glass.
"Dutch" eggnog is also prepared using cognac or brandy. Grind the yolk with sugar, add a little salt. Pour in 0.5 cups of brandy, mix everything and put in a water bath. You should make a warm, but not hot cocktail. Avoid overheating, much less boiling. Remember to stir the drink.
Eggnog can also be prepared with fruits or berries. The base remains the same as in the previous recipes, that is, pounded with sugar or whipped yolk. Add 1 tbsp to this mass. a spoonful of raspberries, currants, blackberries and whisk again. The berries can be replaced with juice.
