From time immemorial, Maslenitsa, a favorite national holiday, has been celebrated in Russia with universal fun, songs, dances and, of course, ruddy pancakes. Round hot pancakes, which are baked in abundance throughout Shrovetide week, symbolize the sun and the approaching spring.

Butter pancakes: recipe for cooking

To bake traditional yeast dough pancakes, you need the following ingredients:

- 400 grams of wheat flour;

- 500 milliliters of milk;

- 3 chicken eggs;

- 20 grams of yeast;

- 40 grams of ghee;

- 15 grams of granulated sugar;

- 5 grams of salt.

Cooking method:

Heat a third of the milk slightly and dissolve the yeast in it. Pour the resulting mixture into a deep bowl, add 130 grams of flour and stir well until the consistency of sour cream. Sprinkle lightly with flour and place in a warm place for about 40 minutes, covered with a towel.

Dissolve butter in warmed milk, add egg yolks, salt and sugar. Mix thoroughly, combine with the matched dough and the remaining flour. When the dough rises, knead twice and add the beaten egg whites - they will make the pancakes porous and light. However, do not whisk the whites too much, otherwise the pancakes will be too dense.

Bake the pancakes in a small frying pan (saucer-sized cast iron pans are best suited for baking pancakes), moderately greased with vegetable oil or a piece of bacon. If the pancake dough is too thick, you can dilute it with the required amount of milk. Sour cream or cream, honey, jam, butter, caviar, red fish and so on are served with ready-made pancakes.

Freshly baked pancakes are especially tasty. They are often called "hot in the heat".

Required Ingredients:

- 325 grams of flour;

- 500 milliliters of milk;

- 4 chicken eggs;

- 20 grams of vegetable oil;

- 30 grams of granulated sugar;

- 3 grams of salt.

Cooking method:

Separate the egg yolks from the whites and beat with granulated sugar and salt until smooth. Add milk and flour. Mix thoroughly, pour in vegetable oil and gradually add the beaten egg whites. Stir gently, trying to do this in such a way that the foam does not fall off.

In addition to milk, for the preparation of pancakes-quick-thinkers, you can use fermented milk products: kefir, yogurt, fermented baked milk and sour milk. Grease a frying pan with oil, heat up and bake quick-thinkers in it. Pour the dough into the pan, preferably in small portions, distributing it evenly over the surface.

Custard pancakes: recipe

Custard pancakes can be baked not only from wheat, but also from rye, buckwheat or oat flour.

Required Ingredients:

- 1 kilogram of flour;

- 500 milliliters of milk;

- 600 milliliters of water;

- 4 chicken eggs;

- 1 teaspoon of salt;

- 3 tablespoons of granulated sugar;

- 2 tablespoons of vegetable oil;

- ghee or lard (for lubrication).

Cooking method:

Beat eggs lightly with a whisk with granulated sugar and salt. Add milk, vegetable oil and stir thoroughly. Gradually add pre-sifted flour and mix well. "Brew" the dough with boiling water and mix thoroughly again. Thanks to brewing with boiling water, the pancakes are thin, in a beautiful "hole".

Custard pancakes are also called "lace" and "openwork".

The dough for custard pancakes should turn out to be liquid and homogeneous, without lumps. Bake the pancakes over medium heat in a greased skillet, pouring a thin layer over the dough. The thinner the pancake is, the tastier it is. You can wrap different fillings in ready-made pancakes: from cottage cheese, from meat, from an apple with cinnamon and sugar, and so on.

Required Ingredients:

For pancakes:

- 225 grams of flour;

- 500 milliliters of milk;

- 2 chicken eggs;

- 20 grams of vegetable oil;

- 30 grams of granulated sugar;

- 3 grams of salt.

For filling:

- 50 grams of herring;

- 5 boiled eggs;

- 50 grams of boiled meat;

- 1 egg white;

- 50 grams of bacon;

- green onions;

- parsley;

- dill greens.

Cooking method:

Beat eggs, granulated sugar and salt into a homogeneous mass. Add milk, flour and mix very well. Pour vegetable oil into the pancake dough and let stand for a while. Heat a frying pan and bake pancakes in it. Put finely chopped boiled meat in the middle of the finished pancake. Put a piece of boiled egg and herring fillet in the middle of the second pancake. Sprinkle with finely chopped green onions.

Put pieces of bacon on the third pancake. Wrap each pancake in a roll. Having prepared all the pancakes in the same way, place them in a greased frying pan.

The tradition of baking pancakes for Maslenitsa is observed by 80% of the population of Russia.

Beat the egg white and place on top of the pancakes. Preheat the oven to 180 ° C and put a frying pan with pancakes in it for 2-3 minutes.

Salt the prepared pancake, garnish with parsley and dill and serve. You can also fill a pancake maker with sauteed vegetables, sauerkraut, fried and salted mushrooms, rice, minced meat or fish.
