Cheese week (Maslenitsa) is a time of preparation for Lent. You cannot eat meat this week, but you can eat dairy products and fish. Pancakes are the main attribute of Shrovetide. To diversify your table for Shrovetide, prepare pancake rolls with original filling.
Pancake rolls with cottage cheese and salmon
You will need:
- milk - 1, 5 glasses;
- yeast - 20 grams;
- egg - 2 pcs.;
- sugar - 2 tablespoons;
- flour - 2 cups;
- salmon 100 grams;
- parsley;
- cottage cheese - 150 grams;
- a pinch of salt;
- lemon juice;
- green onions;
- butter.
Preparation
Break eggs into a bowl and mix them with sugar, add a pinch of salt. Heat the milk over low heat so that it is warm, but not boiled. Knead baker's yeast with a teaspoon and dilute until completely dissolved in a small amount of warm milk. Sift the flour and add to a bowl. Pour milk in a slow stream and stir with a spoon until bubbles appear. Put the butter in a small saucepan and melt over low heat, then add to a bowl. Now knead the dough until you get the consistency of sour cream. Heat the pan and grease it with sunflower oil. Fry pancakes on both sides.
Rub the cottage cheese through a sieve and season with lemon juice. Chop the parsley in a blender and add to the curd. Cut the salmon into thin pieces. The filling will turn out sharper if you add grated garlic to the curd. Spread the cottage cheese with herbs evenly on the pancake, and on top the salmon slices. Roll the stuffed pancake into a roll and tie it with green onions.
Pancake rolls with nuts and herbs
You will need:
- pancakes - 7 pcs.;
- hard cheese - 100 grams;
- pine nuts - 0.5 cups;
- butter - 1 tablespoon;
- sweet pepper - 1 pc.;
- sour cream - 1 tablespoon;
- mayonnaise - 1 tablespoon;
- greens - parsley, basil, dill.
Preparation
Grease the hot pancake with butter. We take a fine grater and rub the cheese. Chop the bell peppers and herbs very finely. Mix cheese, bell peppers, herbs and pine nuts with mayonnaise. The filling is ready. Using a tablespoon, spread the filling on the pancake and wrap it in a roll.
On a baking sheet, pre-greased with butter, lay out pancake rolls with filling and pour sour cream on top. We bake rolls for 8-10 minutes. at a temperature of 180 degrees.
