Baked potatoes with vegetables are a delicious and satisfying vegetarian dish. This dish can be served as a separate dish or as a side dish for meat and fish. It is not difficult to bake potatoes with vegetables, everyone can easily cope with the preparation of such a dish.
It is necessary
- - 500 g of potatoes;
- - 1-2 bell peppers (you can take vegetables of any color);
- - 1 large onion;
- - 1 eggplant;
- - 3-4 cloves of garlic;
- - 1/3 cup olive oil;
- - 2 tablespoons of vinegar;
- - a pinch of dry basil leaves;
- - a pinch of dry ground oregano;
- - salt;
- - ground pepper.
Instructions
Step 1
First, prepare all the ingredients for baking: rinse all vegetables thoroughly in cold water. Peel the potatoes and cut into either thick circles or slices. Remove the seeds from the peppers, as well as the stem of the eggplant, and chop the vegetables coarsely.
Step 2
Prepare a baking dish, for the preparation of this dish you need a deep and wide shape so that the prepared vegetables fill only half of its depth; during the cooking process, the dish will need to interfere. Lubricate it with oil. Put all the potatoes in an even layer on the bottom.
Step 3
Now put chopped onions on top of the potatoes, then sweet peppers and eggplants, the onions can be fried beforehand until golden brown, while it is better to use other vegetables raw.
Step 4
In a deep bowl, combine the dried herbs (oregano and basil), add the vinegar and olive oil, season with salt and pepper and whisk the mixture well.
Step 5
Pour the prepared dressing evenly over the vegetables and put them in an oven preheated to 200 degrees for 15-20 minutes.
After the specified time has elapsed, remove the form, mix its contents and put it back in the oven, but already adjusting the temperature to 170-180 degrees. Bake vegetables for at least 40 minutes.
