If in the summer you managed to collect a rich harvest of zucchini, then this is an occasion to enrich your table with various and healthy dishes from this vegetable. Zucchini can be boiled, fried, stewed, canned, and even made pancakes. Cooking them is very simple and quick, and the dish itself turns out to be low-calorie and light.
It is necessary
- - zucchini 800 g
- - eggs 2 pcs.
- - flour 10 tbsp. spoons
- - greens (dill or onions)
- - salt and pepper to taste
Instructions
Step 1
Wash the zucchini, peel, remove the seeds and grate on a fine grater. If the vegetables have given a strong juice, then it must be drained.
Step 2
Add eggs, flour, finely chopped herbs and spices to the zucchini. Mix all ingredients well. The pancake blank should not be too liquid, but not too thick.
Step 3
Put thin pancakes in a preheated pan with vegetable oil with a tablespoon. Fry on each side for 5-7 minutes.
Step 4
The dish can be served both hot and cold, but preferably with sour cream.
