Cherry strudel is a classic Austrian dish that has so far taken root in the ovens of Russian housewives. The recipe is especially relevant in the cherry season.
Ingredients:
- walnuts or almonds - 50 g;
- butter - 100 g;
- ground butter crackers or shortbread cookies - 50 g;
- sugar - 300 g;
- cherry - 700 g;
- salt - 1 pinch;
- vegetable oil - 2 tablespoons;
- water - 150 ml;
- flour - 250 g.
Preparation:
First, you need to prepare the stretched dough. Sift flour with a pinch of salt, mix with vegetable oil and water, and then begin to knead the resulting mass. The dough should become sticky and not steep. To prevent the dough from sticking to your hands, it is better to grease it with oil; you do not need to add additional flour.
Wrap the resulting product in plastic or cling film and place in some warm place for exactly one hour. Themselves, while the dough reaches, start preparing the filling.
Remove all the seeds from the cherries in advance, and then place them in a medium-sized deep saucepan and cover with a glass of sugar. After stirring, put the container on fire, bring to a boil and then cool. Drain the resulting syrup and pass through a colander.
Toast the nuts in a dry skillet, stirring constantly for 5 minutes, then grind them in a blender. Grind shortbread cookies, mix with nuts.
Now spread a culinary towel or something similar to it on the table. Sprinkle with flour and lay on top of the dough, it must also be sprinkled with flour. Roll out the dough to a medium thickness and begin to gently lift, pulling in a circle. As a result, it should turn out to be as thin as possible so that it shines through. In no case should the dough be torn; if this happens, cover the hole with a piece of dough.
After finishing the painstaking work of pulling the dough, trim off the thick edges and brush the surface with butter. Step back mentally from the edges of 5 centimeters, sprinkle the layer with crumbs of cookies and nuts. For the last turn, step back from one of the edges a little more - about 10 centimeters. Now spread the cherries evenly and sprinkle over the remaining sugar.
Roll up the roll and tuck the edges so that the filling does not leak out. Cover a baking sheet with parchments, place the product on it and send it inside the oven. The surface of the roll must be greased with melted butter in advance. Bake the strudel at 180oC for half an hour. If you wish, you can sprinkle the finished strudel with icing sugar and pour over the syrup. In the classic version, it is served with a scoop of ice cream.
