This strudel combines everything: sweet fruit, creamy ricotta cheese, and light filo puff pastry.
It is necessary
- For 6 persons:
- - 2 apples (Granny Smith can be used), peeled, thinly sliced
- - 1, 5-2 tbsp cherries (fresh, frozen or canned pitted)
- - 1.5 cups powdered sugar
- - 200 g fresh ricotta
- - 1 teaspoon finely grated lemon zest
- - 1 teaspoon ground cinnamon
- - 10 sheets of filo dough
- - 100 g melted butter
- - 100 g grated almonds
Instructions
Step 1
Combine chopped apples, cherries and half of the powdered sugar in one bowl, and the ricotta, lemon zest, cinnamon and half of the powdered sugar in another bowl.
Step 2
Preheat oven to 180C. Brush a baking sheet with a little butter. Brush each sheet of filo dough with melted butter. Sprinkle with grated almonds.
Step 3
Spread the apple and cherry filling over the dough, leaving 6 cm to the edge of the dough on each side. Place ricotta cheese mixed with lemon zest, cinnamon and powdered sugar on top of the filling.
Step 4
Roll the filling into the dough and place seam side down on a baking sheet. Brush the top of the dough with the remaining butter.
Step 5
Bake in the preheated oven for 25 minutes until golden brown and crispy. Sprinkle with powdered sugar when the strudel is done.
