Beef liver is the champion among meat products in terms of the amount of vitamins and minerals it contains. But you don't always know how to cook it so that it is tasty, juicy and eaten by everyone: both children and husband. Traditional frying of the liver in portions is not always possible, and liver cutlets are made simply, they turn out to be very tasty, and it is almost impossible to spoil this dish.

- eggs - 2 pcs.,

- cilantro - 20 g

Instructions
Step 1
Take fresh or thawed beef liver. When choosing a product, pay attention to its color: it should be even, without stains, the surface is smooth, elastic, without dry spots. The top of the beef liver is covered with a thin film that needs to be removed before cooking, otherwise it will give your dish a stiffness and may wrap around the blades of a blender or mincer blade when mincing. Also, before cooking, try to cut out all large rigid vessels and veins from the liver.
Step 2
Cut into pieces and chop in a blender or scroll through a meat grinder.
Add eggs, flour, cilantro, salt and pepper to the mixture to taste. Mix everything until smooth.
Step 3
Peel and chop the onion in the same way and combine with the liver. The resulting mass should be similar in consistency to pancake dough. To enrich the taste, instead of fresh onions, you can add onions fried in sunflower oil.
Step 4
Add eggs, flour, chopped cilantro and salt to the resulting mixture, pepper - to taste. Mix everything until smooth.
Step 5
Add vegetable oil to a hot skillet. Spoon a few liver dough "pancakes" onto it with a tablespoon. After 4-5 minutes, turn the patties over to the other side. Only now can you close the pan with a lid so that the dish is fried better.
Step 6
7 minutes after turning the patties, remove from heat and serve. Mashed potatoes and vegetables are best served as a side dish for cutlets. Bon Appetit!
