  • - pine nuts - ¼ glass;
  • - a bunch of parsley;
  • - garlic - 1 clove;
  • - red bell pepper - ½ tsp;
  • - grated Parmesan cheese - ¼ glass;
  • - chopped green olives - ¼ cup.

Instructions

Step 1

Pierce the meat from all sides with a special ripper - tenderizer, or pierce it with a fork. In a separate bowl, combine lemon juice, a little black pepper, 2 tablespoons. olive oil and ½ tsp. coarse salt. Mix everything well. Grate the prepared meat with the resulting mixture and refrigerate for several hours.

At this time, prepare the pesto sauce. To do this, fry the pine nuts in a dry frying pan, remembering to constantly stir with a wooden spatula. When they take on a light golden hue, remove from heat and refrigerate. Grind the parsley leaves and garlic in a food processor. Add red bell peppers, toasted pine nuts, shredded cheese and 4-5 tbsp. olive oil. Mix all components well until smooth. Put the finished sauce in a deep bowl, pour in 3 tbsp. cold water, add chopped olives and salt to taste.

Remove the meat from the marinade, dry and heat to room temperature. Place a large cast iron skillet over moderate heat and add 1 tbsp. olive oil and place the steak. Fry it for 7-8 minutes until dark brown. Then turn the steak over to the other side and cook for another 8 minutes. Transfer the finished steak to a cutting board and wait about 10 minutes.

Brush the steak with a thin layer of pesto sauce. Then cut it along the fibers into thin slices and pour the remaining sauce on top.
