What you need for potato pancakes stuffed with mushrooms:
- medium-sized potatoes - 10 pcs.;
- flour - 2-3 tablespoons;
- sour cream - 1/2 cup;
- onions - 2 heads;
- dried mushrooms - 50 gr. (you can use champignons instead);
- bacon or bacon - 50 gr.;
- oil for frying;
- fresh herbs;
- salt.
Getting started cooking
If you use dried mushrooms, they must be rinsed in advance and soaked in water for several hours. Then boil and, again rinsing, chop finely.
Wash the potatoes, peel and grate on a medium or fine grater (the finer, the more tender the pancakes will be). Then add flour to it, salt and mix.
Cooking the filling. Chop and melt bacon or bacon, add finely chopped onion and fry for a few minutes. Fry prepared dried mushrooms or chopped champignons in a pan with onions.
Put a tablespoon of potato mass on a preheated frying pan with oil, smooth, put a little mushroom filling on top and again a spoonful of potato mass. Fry the pancakes on both sides until a beautiful crust is obtained. Then put them in a mold, pour sour cream and bring to readiness in the oven or microwave.
The pancakes are served hot, garnished with fresh herbs.
