They have been living in the world for a very long time. And during this time they fell in love with people so much that they spread all over the world. In Ukrainian cuisine, dumplings have a special role - the secrets of their preparation are carried through the years and passed on from generation to generation. Appetizing and hearty dumplings are now considered a national culinary treasure in Ukraine.
A bit of history
Probably, everyone has long known that dumplings come from Ukraine. Every distant Ukrainian corner has its own tricks and secrets dedicated to the preparation of this dish. Nevertheless, Poltava is considered to be their true native land. By themselves, dumplings are pieces of boiled dough, flavored in some cases with spices. Ukrainians do not like them and come up with possible dishes based on them. In the distant past, they were considered a simple village meal. They were eaten mainly by peasants and villagers. After a long day in the fields, the peasants were refreshed with a hearty soup with dumplings, which gave strength for further work. The dish has a rather high calorie content, it satisfies hunger well. For this, the villagers loved him so much.
Now the prototype of dumplings has spread all over the world. In Poland, dumplings live, in the Czech Republic - dumplings, and in Germany semolina pieces of dough are called buckerbze. Dumplings can be simply eaten with sour cream and butter, or added to soup. There are a number of indisputable advantages in cooking them: they are made easily and quickly and you can feed a large family with them to their fill.
Classic soup with dumplings
This is perhaps one of the most beloved recipes by all. Be sure to add them to your culinary piggy bank. Or surprise your friends, acquaintances and household members with unusual national Ukrainian cuisine. The soup will turn out to be rich, aromatic and amazingly tasty. To prepare it, you will need products that can be easily found in any store.
Soup base:
- 1, 2 liters of chicken broth;
- 2 medium-sized potatoes;
- 1 carrot;
- 2 sprigs of parsley;
- half a teaspoon of salt.
Galushki:
- 100 grams of semolina;
- 0.5 liters of chicken broth;
- 1 egg.
1. Start by preparing the dumplings dough. Take a bowl, pour the cereal into it and break the egg. Beat the resulting mass until light foam. Mix everything well and pour in small portions into the chicken broth. Try to come to the "golden mean". The dough should not be liquid, but not thick either. Then leave it to stand for a while and let it swell. When the dough rises a little and comes into shape, divide it into equal pieces and roll into flat cakes.
2. Take a small saucepan, bring the water to a boil and dip the lumps of dough into it. The temperature of the water plays an important role here. If the liquid is not hot enough, the dough will turn into a shapeless porridge. After a few minutes, the dumplings will be ready. Take them out of the water and place them on a plate. Switch to the soup base yourself.
3. Place the pre-cooked chicken broth on the stove, turn on medium heat and wait to boil. While the broth is waiting for its "finest hour", wash the vegetables. Cut the potatoes into medium-sized cubes and grate the carrots. Dip chopped vegetables into the boiled broth and cook until tender, about 15-20 minutes.
4. After the allotted time, add semolina dumplings to the resulting soup. Sprinkle with fresh herbs, cover and cook for another 5-6 minutes over medium heat. Then turn off the gas and let the soup brew for about 10 minutes. In the meantime, it will "come to mind", call your household and invite them to the table. Soup with garlic dumplings in a slow cooker
The following cooking recipe will delight all happy owners of a multicooker. The soup is suitable both for everyday meals and for a festive table. It will turn out to be very fragrant and aromatic, with light hints of greenery. If you can't wait to cook it, get the following set of products:
- 3 potato tubers;
- 1 carrot;
- 2 cloves of garlic;
- 1 medium onion;
- 300 grams of chicken fillet;
- 2 eggs;
- a bunch of dill;
- 250 grams of semolina flour;
- a teaspoon of vegetable oil;
- one and a half liters of water;
- salt to taste.
1. Wash the vegetables first. Grate the carrots on a fine grater, and chop the onion in any shape. And, without wasting time, send them straight to the multicooker bowl. Add a little oil there, and set the "Fry" mode. Add chicken breast to ready-made vegetables, add water and select the "Soup" program for an hour. Don't forget to add salt.
2. Meanwhile, chop the dill finely, cut the garlic into small wedges and place them in a deep bowl. Add oil, salt and flour there. Stir all the ingredients from the heart until they form a beautiful lump of dough with green splashes. Roll out the dough into a long sausage and divide into equal parts. Here are your dumplings and were born. Fragrant, with a light garlic aroma - already at this stage they will smell very appetizing. Drive away the urge to try them on your teeth and continue on.
3. Now it's up to the potatoes. Wash, peel and cut into fairly large cubes. After 40 minutes from the cooking time of the soup, add the potato cubes and garlic dumplings to it. And cook to the bitter end for another 20 minutes. Drum roll, home stretch.
4. When the delicious soup is cooked, let it stand a little longer. During this time, such an alluring aroma will spread through your kitchen that all your relatives will come running to it. Serve with sour cream and crispbread. Enjoy your meal!
Cheese soup with dumplings and olives
If you have already tried the previous two recipes, but do not want to stop there, continue moving towards culinary heights. Delicate cheese soup with dumplings will conquer you with its taste and stay on the usual menu for a long time. First, check your refrigerator and cabinets for the following ingredients:
- 800 g of chicken;
- a kilogram of potatoes;
- 2 carrots;
- 1 onion;
- 3 cloves of garlic;
- 3 pieces of processed cheese;
- a small jar of black olives;
- 1 egg;
- 4 tablespoons flour;
- 2 tablespoons of milk;
- a package of Provencal herbs;
- salt to taste.
1. Take a pot of water and put the chicken drumstick into it to prepare the broth. Put a whole head of onion and garlic there. After about 45 minutes, the broth is ready. Remove all the ingredients from it, leave it empty. Cut the pre-peeled and washed potatoes with carrots into small cubes and send them to the chicken broth. While the vegetables are boiling, move on to cooking the dumplings.
2. Pour milk into a deep bowl, add Provencal herbs, break an egg and gradually stir in flour. When the homogeneous mass takes the shape of the dough, scoop it up with a spoon and add to the almost finished soup. In the next step, cut the cheese into small cubes and dip into the saucepan. Stir well until the cheese pieces are completely dissolved.
3. Now it's the chicken's turn. Tear it into pieces and place with the rest of the ingredients. Sprinkle the soup with Provencal herbs or any other favorite seasoning on top, mix everything well again and turn off the gas. Let the soup sit for 10 minutes. Add olives to it and pour into plates. Done! Delicate creamy taste will not leave anyone indifferent and you will want to repeat this recipe over and over again.
